Okay for those of you who don't know, cooking is a form of art. And Pasty Cheffing (Cakes, Pastry's, sweets, etc.) Is the art of arts in cooking.

In short this is the place where I post photo's of stuff I've made in an attempt to make you drool.

First off are some cupcakes I made. These I did up so I'd have something to test an Idea I had for icing for my Lamintons which I have to make at work on Tuesday.

And this is well the frosting that came with the packet, since I only needed these for a test I was lazy and just bought one of that ready to back packet things, instead of making it from scratch. (I have to make the Lamintons from scratch though.)

Maybe I'll also put up some of my drawings... Maybe, If I can be bothered.
Laminton Piccy's should be up on Wednesday too. ^_^

Thank You Astral and Nab and Nab's mother. I like my fancy plates, I got them from Fiances mother when we moved in togeather. ^_^

These are closer to the traditional Lamingtons. We have pink chocolate and white coconut, and white chocolate and milk chocolate both with pink coconut.

These are a different take on Lamingtons, they are Not Cupcakes. Why do people instantly assume their cupcakes just because of the icing. And yes I know cupcakes have icing like that, but that only the fancy ones and lots of other pastry items has icing like that on them.

A Lamington is a Sponge cake coated in chocolate and coconut.

Heres some info I copied from a random website.

"The simple sponge cake one way or another accidentally become one of Australia’s most popular cakes."

The Invention of the Laminton

The first settlers liked to cook large slabs of cake to feed their large families but the lack of refrigeration and adequate preservatives meant these cakes quickly went stale. Rather than waste the stale cake it was cut into cubes with a jam filling in the centre and coated in chocolate and then rolled in grated coconut. So the original Lamington cake was actually made to disguise stale cake.

Recipes for the Lamington started appearing in cook books in the early 20th century and it soon became one of Australia’s most popular cakes. So popular that people started to make them especially using fresh sponge cake.

The meaning of the word lamington actually means “layers of beaten gold” and some believe this is where it got its name.

The cakes name has also been attributed to the maid of Baron Lamington who was a Governor of Queensland from 1895-1901 who apparently accidentally dropped some sponge cake into Chocolate. The story goes that the Baron then suggested the coconut to avoid messy fingers.

Wow, I think I'd like these lamingtons a lot.
And dangit, I just had to look at this thread while hungry. D<
I just got hungrier...Ah well. Really good stuff, Kaida. :D

Strawberry lamingtons :-o I think I even like them more than regular lamingtons^^

The sponge circles with the ising on them... you know are you sure they can really be dubbed "lamingtons." That usually suggests that the whole thing's coated in chocolate.. they look more like "Iced sponge circles."

Kudos on the creativity though^^ I'd sure eat them :-P

And this week I have Flourless Rasberry Mudcake!

^_^ I turned out very well considering it was my first time making a mudcake, and one with no flour too.
It's a bit late because I couldn't make it on Tuesday and I have Wednesday and Thursday off. So I made it Yesterday (Friday).

As for next week I'm supposed to make something for my dietary requirements. As in Lactose free, so I can't use, cheese, cream, and other dairy products. But I can use milk. Although I've also been told to try to make something that doesn't have eggs in it.
Problem is I can't think of anything. Does anyone have any ideas?

My sister saw your cake and now she really wants to make it, would you mind tossing up a recipe for mudcake? It looks awesome by the way! ;-D

Lactose free but you can use milk? That's odd...

Anyway, not sure if it'd be sweet enough but you could always try my anman (steamed buns filled with sweet red bean paste) recipe.

I can use milk because the type I drink is lactose free, I have yet to find lactose free cream and the only cheese I can find is fetta that made from sheep or goats milk.

Thank you and as for the recipe;

Ingredients; Cake
1tsp coffee granules/powder
1tsp hot water
100gm butter
150gm milk chocolate
1tsp vanilla essence
4 large eggs (min 236gms)
170gm caster sugar
200g almond meal (ground almonds)
2tbs Rasberry Coulie (Optional)

Frosting:
1 cup sugar
1/2 cup butter
1/4 cup cocoa powder
1/2 cup milk
1/2 cup flour
1 teaspoon vanilla
4tbs Rasberry Coulie (Optional)

Rasberry Coulie:
1/3 cup sugar
2 tablespoons water
230g rasberrys (frozen[thaw], fresh or tinned)

Method, Cake;
Preheat oven 180c or 160c for fan forced and grease baking tin.
Dissolve coffee in water.
Melt butter, chocolate, vanilla & coffee over low heat. Cool.
Separate eggs.
Beat egg whites with half sugar until soft peak stage.
Beat egg yolks with remaining sugar until thick, creamy & light.
Fold chocolate mixture and coulie into yolk.
Gently stir almond meal into mixture.
Add 1/3 egg whites to mixture and fold until combined.
Add rest of egg whites and fold until combined.
Bake for 40 mins (or until cooked in the center).

Frosting;
Melt butter in pot.
Slowly add sugar and mix in.
Add in cocoa, mix in and let cool.
Mix milk and flour together.
Add cocoa mixture.
Add vanilla and keep in fridge to thicken and cool.
Add coulie once set.

Rasberry Coulie;
Heat sugar and water in sauce pan.
Mix rasberry's and sugar syrup in blender.
Strain through mesh to remove seeds.
{If you don't have a blender you can make it easily by hand. if the berries are soft enough they will dissolved into the sugar syrup, still strain it through a fine strainer or mesh, this will help break it up more, and remover the seeds. If their not really soft then chop them up first but not really fine otherwise you'll loose the colour and flavour onto the cutting board.
Also you can use a different berry, eg. Strawberry. Just by changing it, just make sure you have the same amount.)

Thats it, and if your sister want just a plain mud cake then just take out the rasberry coulie.
