Also, if your IPA gets hit by something from a wild pokemon, does it take damage into the next battle? And how do we know how much IC we have?

You start with 1000 IC and you only get new IC when you defeat a wild IP while holding a Star Dust Coin or after winning special battles (gym battles, arena battles, etc). In those cases you'll be told how much IC you won, so just keep a tally of your total.

Yeah, I can't really keep track of who's got an SDC and who doesn't by memory alone. If you want to get credit for it, you've got to mention it during the battle.
